SUPERVISES:Executive Chef Dining Room Manager Banquet Manager Bar Manager REPORTS TO:General Manager CLUB INFORMATION:Elk River Club is a private, club community with 241 very active Members that enjoy an 18-hole Jack Nicklaus Signature golf course, tennis, fitness, spa, swimming, a mountaintop equestrian center, state-of-the-art Golf Learning Center, an on-site private airport, dog park, hiking and riding trails, and much more. 401(K) plan is available after 1 year of employment. Upon eligibility (90days), the club will offer a comprehensive benefits package including health, dental, life insurance, short- & long-term insurance, along with sick, and vacation time. SALARY RANGE: Base salary between $95,000 and $100,000 depending upon experience. Bachelor’s degree in hotel/restaurant management preferred. Previous restaurant, hotel or club experience is desirable. CANDIDATE EXPERIENCE AND QUALIFICATIONS:Progressive management experience in food and beverage operations, including budgetary and supervisory responsibilities. Oversees purchasing, receiving and storage of food and beverage products.May attend House and Entertainment Committee meetings.Maintains high efficiency and quality levels.Acquires information about the local competition and overall industry trends.May have dual responsibilities as a catering manager.Approves all booked activities such as banquets and receptions where food and beverage services are required.Instructs head waiters, captains, bartenders and serving staff in club policies and service procedures.Sets performance standards for dining room employees, including service procedures and the types and amounts of liquor, served.Selects uniforms, linens, and decor for the club’s dining areas.Establishes menu and beverage list prices.Develops and implements financial objectives for the food and beverage department, including annual operating budget and capital requests for the department.The Food and Beverage Director supervises food and beverage employees and coordinates with sales and purchasing personnel to ensure the food-service operation meets the revenue and expense projections set by the club. ESSENTIAL FUNCTIONS: POSITION RESPONSIBILITIES:The Food and Beverage Director is responsible for the budgets, management, and operation of the kitchen, bars and wine storeroom, catering services and dining areas of the club, and sometimes directs the operation of dining areas as well. Skills in building, motivating, and training a service-oriented team are needed.
